What changes is who sits next to you, who picks your seat, and how the price is counted. Shared rides are sold per person. The private ride is sold for the boat.

The San Zaccaria listing calls the most comfortable place in a gondola the 'throne', and there is only so much of it, so a couple can end up apart, facing strangers, for the whole half hour.
The Bridge of Sighs ride from San Zaccaria is stricter still. Its economy seat does not even guarantee that people on one booking board the same gondola. The standard seat keeps you in one boat but, in the listing's own words, sitting together cannot be guaranteed and the best seat may not be available. Staff balance the boats by weight.
2The arithmetic for groups

Check the private price for your exact group size before assuming the saving.
3What private does not add
